Good Eats

I love good food! And I love to cook wonderful dishes and desserts.  Cooking is the ultimate form of creative for me.  I enjoy cooking and/or baking for others. Seeing the pleasure they get from eating my food is so very rewarding to me and it give me a sense of accomplishment.

When I retired, I had hoped to take some culinary classes which would lead to doing some catering.  Unfortunately, the weakness in my right arm and hand and my unpredictable fatigue prevented me from pursuing that dream, but it didn’t stop me from cooking.  I’ve watched many cooking shows and read a lot about cooking and baking.  Though I may not have my own catering business, I have wonderful dinner parties and bake scrumptious goodies for friends.

As much as I love to cook, there are days that I don’t even have the energy to boil water.  I am just that tired.  Even though I may not feel like cooking, I still need to eat.  So I’ve had to find ways to eat nutritious food without a lot of time and effort.  The key is to plan ahead.

If you like to cook or bake but find it difficult to do so, this site will give you tips on easy ways to  cook and/or bake.  I also will post recipes with the short cuts I’ve found.  Even with tips and short cuts, cooking and baking can be exhausting. Try to always plan your day and time accordingly so that you can enjoy the experience and the food you create.

Nutrition

And as much as I love to eat, which I do in moderation, I have to be cognizant of the nutritional aspect of the foods I prepare, especially if I’m cooking just for myself.  I try to eat a lot of fruits and vegetables.  It doesn’t always happen because I love pizza and chocolate.  I am addicted to sugar which is not a good thing.  No matter what your food addiction maybe, you should try to eat as healthy as possible.

It is especially important for those  of us who have an autoimmune disease like MS to eat as healthy as possible.  We can be susceptible to foods that cause inflammation.  There are theories about autoimmune diseases and inflammation and the various  diets  that are designed to reduce inflammation. I will provide some information and links for you to research and consider if following one of those diet plans is right for you.  Whatever you decide, always consult your doctor before you change your diet.
